Since 7th April 2023 war broke out between the Sudanese national army and a paramilitary group, the Rapid Support Forces (RSF), resulting in millions of displaces civilians, reports of indiscriminate killings, ethnic cleansing and sexual violence as well as the looting of people’s homes.
Join us at The Marksman pub for an evening of tasting and making delicious fermented foods. Omer will share stories of his home country, Sudan and its rich fermentation history. We will share our knowledge on how to make gurasa from Sudan and pao cai, a Sichuan continuous brined ferment and you will go home with two different ferments that will enrich your daily meals.

Please bring one medium Tupperware container for your gurasa and one 1/2 litre jar for pao cai. We encourage you to bring whatever Tupperware and jar you already have; just make sure they are washed and thoroughly rinsed.
Omer wrote: “Over the past few weeks, I have been fundraising and sending the money to close friend of mine in Sudan. The funds raised have been going directly to supporting people that have been displaced and are at risk of malnutrition and poor sanitation. My good friend has been buying basic food and drink items as well as sanitation products and providing them to schools where many displaced people have been sheltering. I hope to continue to raise funds for them to continue this work but I am also open to looking for another group that helps those affected by the recent esscalation of violence. As such I will look into other options and confirm where the funds from our fundraiser will be sent.”
Ladies Who Ferment is an all female fermentation collective from all 4 corners of the world. Our aim is to share, feed and educate about the importance and benefits of fermented foods. All the money raised will be donated to (a Sudanese charity).
Omer Eltigani is a food archivist, chef, and author of an upcoming cookbook on Sudanese food and drink.
