Expand your foodcrafting knowledge with four more go-to skills. Whether you have taken Foodcrafting 101 or not, you won\’t want to miss this full-day, hands-on workshop. We will prepare you to start making your own chèvre cheese, hard apple cider, pickles and artisanal multi-seed crackers from scratch. Your d.i.y ambassadors/instructors have been hand picked from some of the city\’s finest food crafters.

The workshop includes four, 1-hour foodcrafting sessions, catered lunch and beverages. Each participant will be sent home with a take-home container of cheese, a jar pickles, a bottle of hard apple cider and your own personalized artisanal crackers. You\’ll also receive the Institute\’s signature instruction manual with recipes and materials/ingredient resource guide empowering you to recreate everything at home.

Foodcrafting 102 Workshop Schedule:


Our workshop takes place on a working, urban micro-dairy with a herd of adorable goats. Lucky you! We will be introduced to the goats and then learn how to make fresh goat milk chèvre You\’ll be able to take home your cheese with some delicious recipes–if you can wait that long!


Gourmet pickling may very well be the next \”must know\” foodcraft to brag about. Portlandia fans can say \”pickle it\” as much as they want, but you\’ll actually be doing it! We will select something seasonally fresh from the farmers\’ market and guide you through the process from brining to water-bath canning. Past sessions have included pickled Chipotle Fennel Carrots…just saying!

Hard Apple Cider:

Johnny Appleseed had it right. Anyone that\’s read Michail Pollan understands that apples were made for cider. Here at the Institute we\’re talking \”Hard\” cider. Out-geek the craftsman beer brewing craze with the next big thing. Get your buzz on with no special equipment other than a jug of unfiltered apple juice, yeast and a simple airlock cap…..heck, we\’ll throw in the airlock as part of your class!

Multi-seed Crackers:

Not a dreary back-of-the-pantry cracker, but an artisinal delicacy made from fresh-ground heirloom wheat–jazz yours up with the Institute\’s famous Flavor Bar™ of seeds and spices for a personalized creation to take home! (If only we had some intoxicatingly creamy chèvre to spread on top…oh wait: we do!)
