Explore the world of dairy fermentation and learn about selecting milk, ripening, coagulating, cutting the curd, using wild and commercial cultures, and improvised options to age cheese at home.

Learn how the season, milk type and quality, temperature, curd treatment, draining and aging techniques influence the final cheese. Make a feta style cheese in class!
