Dried fruit fermentation

Postby Trufflehunter on Mon Apr 13, 2009 1:54 am

I have acquired a huge haul of dried fruit from a shop bin, and wondered if it would be possible to ferment it. There are sultanas, dates, prunes, apricots etc. Not sure I could even attempt to eat them all, but maybe could bring myself to drink their fermented nectar. Any advice?

wouldn't see why not - they have sugar in them.

although i haven't tried to do it. My initial idea would be to add water and pulverize them, ferment, then press like you might do with a red wine... Not sure about tannins, though, so you might get some wacky flavors.

if you have a bunch of them, try 1 gal at a time?

would be interested in hearing how it goes!
