Water/Honey separation?

Yesterday I :
-boiled a gallon of water for 15 min.
-took it off the burner and then put 3 lbs. of honey in the water
-stirred it around
-added a cup of fresh squeezed cherry juice
Within an hour i could see swirls of stuff, what I assume to be honey swirling around. It keeps settling to the bottom. Last time I made a batch I had no trouble with separation, but does honey ever separate from water. Should I have stirred the honey and dissolved it even longer than I did?

Honey is probably +99% soluble in water. It does happen with mead making that the ferment can stratify, but this usually happens over a period of time. I suspect what you're seeing is pectin or some other component of the cherry juice separating out, and not the honey.

Having made many many batches of mead, even if the honey does not immediately dissolve into solution, the yeast will grow into large enough numbers to eat away at it very effectively in a short time. Sometimes a slower fermentation is even beneficial to flavor. In the words of a wiser man, don't worry, have a homebrew ;)
