Gaot Milk Whey

Postby smedway on Sun Nov 15, 2009 6:22 pm

I am experimenting with yogurts since we have allergies to cow's milk. I made some with breastmilk but had to use a cow milk starter, we have soy allergies too... whooo hooo... but I found that goat is okay. We have access to the meyenberg milks, powder and condensed, i know it is not optimum but it is really all we can get where we are.

I am curious to know if anyone has experimented with 1. making whey from pasteurized milk and 2. if anyone has experimented with pro-biotic supplements to create yogurts.

I found an organic supplement made from carrot juice and not dairy of any kind. It has two yogurt cultures in it and I was thinking of using it as a starter instead of a pre-packaged yogurt. Anyone have any experience with this?

You might check into yogurt making kits/supplies for starter culture. I'm not sure if these contain cow's milk or not. Maybe check out New England Cheese Making Supply.

Re: Goat milk kefir, need help

I have been trying to get my family to drink kefir. I first used skim milk. My son didn't like it but he would drink it.

I posted a question on a Yahoo kefir forum and the members there all freaked out because I used skim milk. The fact is, it's almost impossible to find whole milk (the only non homogenized milk) in Canada so I got some full fat goat milk instead. My son refused to drink it and said it tasted weird.

I wouldn't blame him because the milk did taste a bit unusual. I would drink it for health sakes but probably never for the taste. So I tried diluting it with water, adding coconut milk, even Ovaltine (sweet malt powder; he usually drinks anything with Ovaltine in it) but he just wouldn't touch it. I am feeling very frustrated and not sure if I should go back to skim milk or should I just give up.

Is there a way to mask the unique taste of goat milk?
