ginger ale ferment gone jelly

This is my first attempt at a lacto-fermented ginger ale, so I'm not really sure what is going on. I expected that there might be a scoby involved in ginger ale, but what I have is a six gallon carboy that is entirely filled with jelly. It appears to still be fermenting (jelly is overflowing the airlock!) after being in the carboy for about five days now. As my wife mentioned while cleaning up the overflow from the floor, "it looks like a cow sneezed." This stuff has a bizarre consistency and I'm almost convinced it will crawl out and start walking :-)

Did this get contaminated with something? Too much or too little of something? Any guesses?

Search this forum for dextran.

It's a thing that happens sometimes. Some people have reported that if you continue to ferment, it goes away and becomes liquid again. I'm not sure if we have a definitive explanation yet.
