Tempeh made me sick

H iall,

I made a batch of tempeh a few days ago, a kind of okara tempeh.
I boiled the beans only slightly, but with too much vinegar. Then I ground them in the blender, and heated them in a large pot to dry the okara. I put the tempeh pans in the oven, covered with perforated foil, with glass jars full of hot water. I thought the tempeh would not turn out, because I put too much vinegar in. While checking it, I noticed a very strong vinegar smell. I thought it was a goner, so I left it for a day and a half. When I took it out, it looked and smelled fine. It had achieved mold, and the mold was all white. The vinegar smell was gone.

But it made me sick to my stomach, complete with vomiting.

So I tried it again, same method, only with much less vinegar. I put the pans in the oven last night, and the mold is already growing this morning. There's no over-whelming vinegar smell. But it did smell funky to me at one point. The funky smell is now going away, but I'm feeling nervous about eating it now.

Could I have over-cooked it? Or is the problem that I let it go for a day and a half,the first time?
