natto with things besides soy???

My family isn't really hot on soy beans...I was wondering if it were possible to do natto on something besides soy beans....like rice???

Anythoughts or experiences???

Aliyanna, I'm not an expert on natto, but I have a feeling that rice (at least rice alone) might not be the best substrate. I kinda sense that it might go awry because the nutrient profile is so different than soy. But I imagine other legumes would work...but could be wrong about all of that.

The natto starter from Gem Cultures goes a long way. If you like natto, I'd be inclined to just experiment and see what happens.

You could try black beans, pinto beans, chickpeas, aduki beans etc but not rice. I've never heard of it done. After all, Japanese eat natto with rice so it doesn't make sense.

i read its the protein reactions that gives it flavor. so use something that's got some protein, and free sugars or u can add some free sugars

sugar + protein needed for natto
