Growing Koji on Barley for miso making

Postby WWFSM on Sun Nov 30, 2014 8:52 pm

A question for you koji growers out there:

When growing koji on barley, is it possible to use the whole grain (hull removed) barley instead of pearled or pot barley like recipes recommend? If so, what do I need to do differently?

Is there anything different using whole grain barley koji in miso paste recipes that recomend pot or pearled barley koji?

Thanks in advance.
