Kefir turning to cheese?

Good morning, I am very new to kefir production and I am sure I am doing something wrong. Yesterday morning I put 2 tbls of well formed large pearly white grains in 1/2 c milk. This morning the jars contain a 2" mass of grains and thick white creamy stuff with a clear layer (about 1/4 - 1/2") of liquid separated and standing in the bottom of the jar. I'm pretty sure I have healthy grains as they are bright white and seen to multiply before my eyes when I drain and add new milk. Where is my process breaking down?

Sounds like you have very happy grains! Your milk is separating into kurds and whey because of acidification. Try fermenting for a shorter time or at a lower temp.

2 tbsp of grains is enough to do like 2 quarts of milk at a time
