Using Pasteurized Apple Juice

What is the best way to ferment pasteurized apple juice without adding yeast from the store. I would like to use the "Wild" yeast. I am thinking of peeling an apple and throwing the peels into the jug.

That's the way to do it. I would suggest finding some organic apples as this is one fruit that really gets hosed with junk when produced conventionally. You could also use other fruits or fruit rinds as well. Grapes and plums work also. Maybe you can find something some fruit that is local and in season(?) It doesn't have to be apples necessarily.
